Our Story

"Pre-Hispanic Cuisine was born to honor our indigenous people and their ingredients, to honor nature and earth. Our journey began as a food truck in 2019, with a dream to exalt indigenous cuisine, using local ingredients and produce. We appreciate the opportunity to share our roots with the community."

Behind Pre-Hispanic Cuisine is a passionate team led by our Chef Jesus Varguez, Front of House Manager Cenobio Albarran, and co-owner Ivan Mendoza. Dedicated to preserving and elevating the flavors of indigenous Mexican cuisine. With a deep respect for tradition and a commitment to quality, our Chef brings experience, creativity, and authenticity to every dish.
